Broccoli Salad Empty Broccoli Salad

I just had this and it was delicious!!

I was only making this for myself so I made a smaller sized salad and I also tweaked it to be more challenge friendly

1 1/2 cup broccoli florets
2 slices pancetta (fancy bacon, I feel like its less fat too haha)
1 slice chopped of a large red onion
1/4 red pepper
20ml greek yogurt (just a little less than 1/8 of a cup)
1/4 tsp white vinegar
1/2 pkg stevia (I don't think this was even really needed)

Original Large recipe:
2 heads of broccoli (only use the florets, discard big stems)
1/3 lb bacon crispy
1 cup walnuts
1/2 red onion chopped
1/2 cup currants
1/2 cup greek yogurt
2 tbsp sugar
2 tsp white vinegar

You could add all kinds of things to it I bet cucumber and snow peas would be good in there too. (I didn't use walnuts or currants)
