Vegetable Quiche Cups to go
1pkg (10 0z)frozen chopped spinach
3/4 Cup liquid egg substitute
3/4 Cup shredded reduced-fat
1/4 Cup green pepper diced
1/4 Cup diced muffin
3 drops hot pepper sauce
.microwave the spinach for 2 1/2 minutes on high. drain the excess liquid. line a 12 cup pan with foil baking cups. spray with cooking spray.
combine the egg, cheese,peppers,onion and spinach in a bowl. mix well. divide evenly among the muffin cups. bake at 350 for 20 minutes,
until knife inserted in middle comes out clean.
these can be frozen and reheated...any combination of veggies and reduced fat cheese may be used.
2 of the cups is a serving....each serving is 77 calories,
9 g protein, 3 g carbs, 3 g fat, 2 g fiber.
