Peaut Butter Protein Pancakes
Combine ½ scoop of vanilla protein powder, 3 egg whites, 1-2 tablespoons of natural peanut butter (or nut butter of choice) and ¼ cup of unsweetened almond milk in a blender or food processor until a thick batter is formed (FYI sometimes the batter doesn't get thick - it depends on your protein powder and how long you blend it for - when mine seems runny I use one of those circles for eggs to keep them round for breakfast sandwiches and what not to pour my batter into). Pour it into a pre-greased frying pan and cook on both sides. On workout days you can top it off with some sugar-free jam for a peanut butter and jelly pancake or some banana fr a PB and banana pancake! I cook up a bunch and keep them in my fridge b/c they are good heated up in the microwave or even in the toaster.
