Almond battered haddock or chicken
If you are looking for a tasty way to make your haddock or chicken I recommend this! Just make sure it fits in with your carb and fat goals.
Ingredients:
Almond meal (I buy it at the bulk barn might also might be known as almond flour, you can also get it in the grocery stores)
1 egg (depending on how many pieces of fish/meat you are making you might need more)
Garlic (1tsp or whatever you like)
1tsp butter
chicken or fish
Break the egg into a bowl and whisk. Measure out almond meal (I did 1/4 of a cup) and spread out on a plate. Dredge fish or chicken through the egg, then through the almond meal on both sides. Add to frying pan with butter and garlic. Cook on both sides until done. Enjoy.
I made mine last night with 6oz of haddock and not much egg stuck to the fish so I probably only used 1/4 of one egg. So good.
